Pancakes with Cherry Stuff

2 cups whole spelt flour
1 cup mixture corn and white flour
1 tbs baking powder
1/2 tsp sea salt
1 cup soy milk
1 large banana
11/2 cup water
coconut oil

-mix all the dry ingredients
-blend the banana with the water(I use the hand blender for this)
-add the soy milk and the banana water mixture to the flour
-blend everything well(I used the hand blender for this too, but it can be done by hand)
-in a frying pan heat a 1/2 tsp of coconut oil and pour a ladle full of pancake batter. Make sure that move the pan around to for an even circle
-turn the pancake once, when it becomes golden brown
-place on a serving plate, put some cherry stuff in the middle and roll the pancake
-pour a bit of coconut cream on top( I use Kara, UHT natural coconut cream)
– sprinkle with a tiny bit of coconut sugar

cherry stuff

1 cup frozen cherries
1/4 cup water
1 tsp kuzu dissolved in 1/4 cup water

-cook cherries in water until defrosted
-add kuzu and stir until it turns thick and glossy
